  • 2 tablespoons water
  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped
  • 2 tablespoons unsalted butter
  • Fresh blackberries for decorating


Instructions

  1. Blend blackberries until smooth and strain to remove seeds, reserving 1 cup puree for the cake.
  2. Cream butter and sugar until pale and fluffy, then add eggs one at a time.
  3. Mix in blackberry puree and oil until smooth.
  4. Whisk flour, cocoa powder, baking powder, baking soda, and salt in a separate bowl.
  5. Add dry ingredients to the wet mixture, alternating with buttermilk, mixing just until combined.
  6. Preheat oven to 350°F and divide batter evenly between two greased 8-inch cake pans.
  7. Bake for 25 to 30 minutes until the cakes spring back lightly, then cool completely.
  8. Cook blackberries, sugar, and lemon juice in a saucepan, then thicken with cornstarch mixture and cool.
  9. Heat cream and pour over chopped chocolate and butter, stirring until smooth to make ganache.
  10. Spread blackberry filling over one cake layer, top with second layer, and pour ganache over the cake.
