Description

This one-skillet dinner combines tender, juicy steak bites with crispy, golden garlic herb potatoes in a rich, buttery garlic sauce. It’s an easy yet impressive comfort meal that’s perfect for weeknights or entertaining guests. The dish is made in a single pan for minimal cleanup and maximum flavor.

  • lbs sirloin or ribeye steak, cut into bite-sized pieces

  • lbs Yukon Gold potatoes, diced into small chunks

  • 4 tablespoons butter, divided

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 tablespoon chopped fresh parsley

  • 1 teaspoon fresh rosemary (or ½ tsp dried)

  • 1 teaspoon fresh thyme (or ½ tsp dried)

  • Salt and freshly ground black pepper, to taste

  • Optional: lemon juice or zest for brightness


Instructions

  • Boil Potatoes: Boil potatoes until fork-tender (10–15 minutes) in a pot of salted water. Drain and set aside.

  • Sear Steak: Pat steak pieces dry and season with salt and pepper. Heat one tablespoon olive oil and one tablespoon butter in a large skillet over high heat. Add steak in a single layer, sear 3–4 minutes per side until browned and medium-rare. Remove from the skillet and set aside.

  • Sauté Potatoes: Add remaining oil and one tablespoon butter in the same skillet. Add potatoes and cook until golden and crisp, about 5–7 minutes. Stir occasionally.

  • Make Garlic Butter Sauce: Reduce heat to medium. Push potatoes to the side, add the remaining two tablespoons of butter and garlic. Sauté until fragrant, then stir everything together.

  • Finish Dish: Return steak bites to the skillet. Toss with potatoes and garlic herb butter. Add fresh herbs and adjust seasoning to taste. Serve warm.

Notes

Steak should be at room temperature before cooking for even searing.

Use a cast iron or stainless steel skillet for the best browning.

Don’t overcrowd the skillet—cook steak in batches if needed.

Leftovers reheat well in a skillet or oven.
