- 2 cups rotini pasta, cooked and drained
- 1 cup sweet corn kernels
- 1 packet ranch seasoning mix
- 1 cup shredded cheddar cheese, plus more for topping
- 1/2 cup cream cheese, softened
- 1/2 cup sour cream
- 1 cup milk
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a skillet over medium heat and brown the ground beef, breaking it up as it cooks. Season with garlic powder, onion powder, salt, and pepper.
- Drain excess fat, then stir in the ranch seasoning until the beef is evenly coated. Set aside.
- In a saucepan over medium heat, combine cream cheese, sour cream, and milk, stirring until smooth and creamy.
- Add the shredded cheddar cheese and stir until fully melted into the sauce.
- In a large bowl, combine the cooked rotini, seasoned beef, sweet corn, and cheese sauce, mixing gently until well coated.
- Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
- Transfer the mixture to the baking dish, spread evenly, and top with extra shredded cheddar.
- Bake uncovered for 20–25 minutes until bubbly and lightly golden.
- Let rest for 5–10 minutes before garnishing with fresh parsley and serving.
Notes
- Use ground turkey or chicken instead of beef if preferred.
- For a creamier bake, add a splash of milk before baking if the mixture seems thick.
- Leftovers keep well in the refrigerator for up to 3 days.
- The unbaked casserole can be frozen for make-ahead convenience.
