Description
Chicken Mole is a traditional Mexican dish made with tender chicken smothered in a rich, complex mole sauce. This homemade version combines chiles, spices, chocolate, and nuts for a bold and comforting meal. Serve it over rice, in tacos, or as part of a burrito bowl to bring a taste of Mexico to your table.
Ingredients
Essential:
3 cups cooked, shredded chicken (or rotisserie chicken)
2 tablespoons chili powder
1 teaspoon ground cinnamon
1 medium onion, chopped
3 cloves garlic, minced
2 tablespoons oil
1/2 cup unsweetened chocolate, chopped or grated
2 large ripe tomatoes, chopped
1/4 cup roasted peanuts or almonds
Salt to taste
2 cups chicken broth
Optional Additions:
1 dried ancho chili, seeded and soaked
1 dried guajillo chili, seeded and soaked
1 chipotle chili in adobo sauce
1/4 teaspoon ground cloves
Fresh cilantro or parsley for garnish
Instructions
Sauté aromatics: In a large pot, heat oil over medium. Add onions, garlic, and any dried chiles. Sauté until softened and fragrant.
Add tomatoes & nuts: Stir in tomatoes and peanuts or almonds. Cook for 5 minutes, stirring often.
Blend: Transfer the mixture to a blender. Add chocolate, chili powder, cinnamon, and chicken broth. Blend until very smooth.
Simmer sauce: Return the sauce to the pot. Bring to a low simmer. Add salt and any optional spices to taste.
Add chicken: Stir in shredded chicken and cook for 10–15 minutes until everything is hot and the flavors have melded.
Serve: Spoon over rice or use in tacos or burrito bowls. Garnish with cilantro or parsley.
Notes
You can make the mole sauce in advance and freeze it.
Adjust the chili quantity to control spiciness.
Use store-bought mole for a quicker version.
Letting the mole sit for an hour or overnight enhances its flavor.
