  • 3/4 cup unsalted butter

  • 3 large eggs (room temperature)

  • 1/3 cup + 1 tbsp granulated sugar

  • 1/4 cup all-purpose flour

  • 1 tsp vanilla extract

  • 1/4 tsp salt


Instructions

  1. Prep ramekins: Butter four 6-ounce ramekins and dust with cocoa powder.

  2. Melt chocolate & butter: In a microwave-safe bowl or double boiler, melt the chocolate and butter until smooth. Let cool slightly.

  3. Make batter: In a large bowl, whisk eggs, sugar, and vanilla until light. Gradually stir in the melted chocolate mixture.

  4. Fold in flour and salt until just combined.

  5. Pour into ramekins, filling each about ¾ full.

  6. Bake at 425°F (218°C) for 9–10 minutes. The edges should be set, but the center should still jiggle.

  7. Let sit 1 minute, then invert onto plates.

  8. Serve immediately, optionally with powdered sugar, berries, or ice cream.

Notes

Use high-quality chocolate (60–70% cocoa) for the best flavor.

Avoid overbaking to preserve the molten center.

Batter can be made 24 hours in advance or frozen in ramekins for up to 2 months.
