8 oz bittersweet chocolate (65% cocoa recommended)

3/4 cup unsalted butter

3 large eggs (room temperature)

1/3 cup + 1 tbsp granulated sugar

1/4 cup all-purpose flour

1 tsp vanilla extract

1/4 tsp salt
Instructions

Prep ramekins: Butter four 6-ounce ramekins and dust with cocoa powder.

Melt chocolate & butter: In a microwave-safe bowl or double boiler, melt the chocolate and butter until smooth. Let cool slightly.

Make batter: In a large bowl, whisk eggs, sugar, and vanilla until light. Gradually stir in the melted chocolate mixture.

Fold in flour and salt until just combined.

Pour into ramekins, filling each about ¾ full.

Bake at 425°F (218°C) for 9–10 minutes. The edges should be set, but the center should still jiggle.

Let sit 1 minute, then invert onto plates.

Serve immediately, optionally with powdered sugar, berries, or ice cream.
Notes
Use high-quality chocolate (60–70% cocoa) for the best flavor.
Avoid overbaking to preserve the molten center.
Batter can be made 24 hours in advance or frozen in ramekins for up to 2 months.
