- 3/4 cup light brown sugar
- 2 1/2 tsp vanilla extract
- 2 eggs
- 1 2/3 cups all-purpose flour
- 2 tsp corn starch

- 1 tsp baking soda
- 1/2 tsp kosher salt
- 8 oz semi-sweet chocolate
- 3/4 cup heavy cream
- 1 cup cosmic brownie sprinkles
Instructions
- In a stand mixer, combine melted butter, granulated sugar, brown sugar, and vanilla extract. Mix on medium for 1 minute.
- Add eggs and mix on low until fully incorporated.
- Add flour, corn starch, cocoa powder, baking soda, and salt. Mix on low until just combined.
- Line a baking sheet with parchment paper and scoop 2–2.5 tablespoons of dough per cookie.
- Refrigerate dough for 30 minutes to chill.
- Preheat oven to 350°F.
- Place dough balls 2 inches apart on a parchment-lined baking sheet.
- Bake for 9–10 minutes until edges are set.
- Cool cookies on baking sheet for 3 minutes, then transfer to a rack to cool completely.
- Heat heavy cream until simmering and pour over chopped chocolate. Let sit for 5 minutes.
- Add vanilla and whisk until smooth. Let ganache cool 15–30 minutes until spreadable.
- Spread ganache over cooled cookies, leaving a small border.
- Top with sprinkles and allow ganache to set before serving.
