Description

Instructions

  1. In a large mixing bowl, stir together the melted butter, granulated sugar, brown sugar, and vanilla until smooth.
  2. Add the eggs and mix gently until fully incorporated.
  3. Add the flour, cornstarch, cocoa powder, baking soda, and salt, mixing just until a thick dough forms.
  4. Scoop the dough into even portions using a standard cookie scoop (about 1.5 tablespoons each) or a heaping tablespoon per cookie. This helps ensure even baking and a more consistent yield. Place the scooped dough on a baking sheet and refrigerate for 30 minutes to chill.
  5. Preheat the oven to 350°F and line baking sheets with parchment paper.
  6. Bake the cookies for 9–10 minutes, until the edges are set and the centers look slightly underbaked. This recipe yields about 24 cookies, perfect for sharing or bringing to a gathering.
  7. Let the cookies cool completely on a wire rack.
  8. Heat the heavy cream until just simmering, then pour it over the chocolate and let it sit for 5 minutes.
  9. Whisk in vanilla until smooth and allow ganache to cool until spreadable. If the ganache is too thick, gently warm it over a double boiler or in short bursts in the microwave, stirring until it loosens. If it turns out grainy or separated, add a splash of warm cream and whisk until it becomes smooth and glossy again. These quick fixes help ensure your ganache is silky and easy to spread.
