- 1 cup heavy cream
- 1 cup chicken broth
- 3/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Fresh parsley, chopped, for garnish
Instructions
- Bring a large pot of salted water to a boil. Cook rotini until al dente, reserving 1/2 cup of pasta water. Drain.
- Season chicken with olive oil, garlic powder, salt, pepper, and Italian seasoning. Sear in a skillet over medium-high heat until golden and cooked through, about 6-7 minutes. Remove and set aside.
- Reduce heat slightly. Melt butter in the same skillet and sauté minced garlic for about 1 minute until fragrant.
- Add chicken broth and heavy cream. Whisk to combine and simmer for 3-4 minutes until slightly thickened.
- Stir in Parmesan cheese gradually, whisking until smooth. Thin with reserved pasta water if needed.
- Return chicken and pasta to the skillet and toss until fully coated in sauce.
- Garnish with chopped parsley and serve hot.
