  • 12 oz rotini pasta
  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 3/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • Fresh parsley, chopped, for garnish


Instructions

  1. Bring a large pot of salted water to a boil. Cook rotini until al dente, reserving 1/2 cup of pasta water. Drain.
  2. Season chicken with olive oil, garlic powder, salt, pepper, and Italian seasoning. Sear in a skillet over medium-high heat until golden and cooked through, about 6-7 minutes. Remove and set aside.
  3. Reduce heat slightly. Melt butter in the same skillet and sauté minced garlic for about 1 minute until fragrant.
  4. Add chicken broth and heavy cream. Whisk to combine and simmer for 3-4 minutes until slightly thickened.
  5. Stir in Parmesan cheese gradually, whisking until smooth. Thin with reserved pasta water if needed.
  6. Return chicken and pasta to the skillet and toss until fully coated in sauce.
  7. Garnish with chopped parsley and serve hot.
