Creamy Garlic Chicken Pasta

Description

Creamy garlic chicken pasta made with tender chicken, pasta, spinach, tomatoes, and a rich garlic cream sauce. A comforting, family-style dinner that comes together quickly for busy weeknights.


Ingredients

  • 10 ounces dry pasta
  • 1 pound boneless, skinless chicken breast
  • 1 teaspoon crushed powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoonful of paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 garlic cloves, minced
  • 1 cup minced tomatoes
  • 2 cups chopped fresh spinach
  • 2 cups heavy cream
  • 1/2 cup finely grated or shredded Parmesan cheese


Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente according to package directions. Drain and set aside.
  2. Season both sides of the chicken with garlic powder, Italian seasoning, paprika, salt, and black pepper.
  3. Heat olive oil in a large skillet over medium-high heat and cook the chicken until golden on both sides and cooked through. Remove from the skillet and let rest.
  4. Lower the heat and add butter to the same skillet. Stir in the garlic and cook just until fragrant.
  5. Add the diced tomatoes and spinach and cook until the spinach wilts and the tomatoes soften.
  6. Reduce the heat and pour in the heavy cream, stirring gently to combine.
  7. Add the Parmesan cheese and stir until the sauce is smooth and creamy.
  8. Slice the cooked chicken and return it to the skillet along with the cooked pasta. Toss gently to coat everything evenly and serve warm.

Notes

  1. Use freshly grated Parmesan for the smoothest sauce.
  2. If the sauce thickens too much, add a splash of pasta water or milk to loosen it.
  3. Chicken thighs can be used instead of chicken breast for a juicier result.
