Description

  • 1/4 teaspoon black pepper
  • 1 cup cold club soda or beer
  • 1 large onion, sliced into thick rings
  • 3/4 cup cold club soda or beer (for onion rings)
  • Vegetable oil, for frying
  • Lemon wedges, for serving
  • Tartar sauce or ketchup, for serving


Instructions

  1. In a large bowl, whisk together the flour, cornstarch, baking powder, paprika, garlic powder, salt, and black pepper until evenly combined.
  2. Slowly whisk in the cold club soda or beer until a smooth, pourable batter forms, then refrigerate the batter while preparing the oil.
  3. Heat about 2 inches of vegetable oil in a deep skillet or Dutch oven to 350°F.
  4. Separate the onion rings and dip them into the batter, letting excess drip off before carefully lowering them into the hot oil.
  5. Fry the onion rings in batches for 2–3 minutes per side until golden brown, then remove and drain on paper towels.
  6. Pat the cod fillets dry and lightly dust them with flour so the batter adheres well.
  7. Dip each cod fillet into the batter, allow excess to drip off, and gently place into the hot oil.
  8. Fry the cod for 4–5 minutes per side until the batter is golden and the fish flakes easily.
  9. Remove the fish and drain briefly, then serve immediately with onion rings, lemon wedges, and dipping sauces.

Notes

  1. For extra crisp onion rings, fry them once for 1 minute, drain, then fry again until golden.
  2. Club soda keeps the batter light, while beer adds a deeper flavor.
  3. Cod, haddock, or pollock all work well in this recipe.
  4. Reheat leftovers in an air fryer or oven to maintain crispness.
