Ingredients

  • to 2 pounds chuck steak or sirloin steak, cut into bite-sized pieces
  • 2 pounds russet or Yukon Gold potatoes, peeled and cut into chunks
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • 2 tablespoons butter, cut into small pieces
  • 1½ cups shredded cheddar cheese
  • ½ cup sour cream
  • Chopped green onions or bacon bits, optional


Instructions

  1. Lightly grease the inside of the crockpot to prevent sticking and make cleanup easier.
  2. Add the potato chunks to the bottom of the slow cooker and season lightly with salt and pepper.
  3. Layer the steak pieces over the potatoes, followed by the chopped onion and minced garlic.
  4. In a measuring cup, mix the beef broth with Worcestershire sauce and pour evenly over the ingredients.
  5. Sprinkle smoked paprika and dried thyme over the top, then dot with butter pieces.
  6. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours until the steak is tender and potatoes are soft.
  7. About 20 minutes before serving, stir in the shredded cheddar cheese and sour cream.
  8. Let the dish sit briefly before serving so the sauce thickens slightly.

Notes

  1. Chuck steak gives the most tender result when slow cooked.
  2. Cut potatoes into even-sized pieces so they cook evenly.
  3. Add dairy only near the end to keep the sauce smooth and creamy.
  4. If the dish looks thin, resting it uncovered for a few minutes helps it thicken.
