Instructions
- Bring a pot of water to a boil, add the diced zucchini, and cook for 3 minutes to lightly soften and release excess moisture. Drain well and allow the zucchini to cool slightly.
- Preheat the oven to 350°F and lightly grease a 1½-quart baking dish.
- In a large bowl, combine the zucchini, mayonnaise, shredded cheddar cheese, beaten eggs, black pepper, and garlic powder, stirring gently until evenly coated and creamy.
- Spread the mixture evenly into the prepared baking dish.
- In a small bowl, mix the panko breadcrumbs with the melted butter, then sprinkle evenly over the top of the casserole.
- Bake uncovered for about 35 minutes, until the top is lightly golden, the edges are bubbling, and the center feels set.
- Remove from the oven and let the casserole rest for 5 to 10 minutes before serving.
