Description

Warm, comforting sausage egg and cheese roll-ups baked until golden. This easy breakfast recipe is perfect for busy mornings, make-ahead meals, or a relaxed family brunch.


Ingredients

  • 10 pork breakfast sausage links, cooked
  • 5 large eggs
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 10 (6-inch) flour tortillas
  • Optional: salsa
  • Optional: guacamole


Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper or foil.
  2. Scramble the eggs in a skillet until just set but still soft.
  3. Lay the tortillas flat and divide the scrambled eggs evenly among them.
  4. Sprinkle shredded cheese over the eggs, then place one sausage link on each tortilla.
  5. Roll the tortillas snugly and place them seam-side down on the prepared baking sheet.
  6. Bake for 10 to 15 minutes, until the tortillas are lightly golden and the cheese is melted.
