A creamy, cheesy, and golden-topped homemade baked mac and cheese that delivers classic comfort food flavor. Elbow macaroni is baked in a rich cheese sauce with a crispy breadcrumb crust, perfect for weeknight dinners, potlucks, or holiday sides.
Ingredients
12 oz elbow macaroni (or cavatappi/shells)
4 tbsp unsalted butter (plus 2 tbsp for topping)
4 tbsp all-purpose flour
4 cups whole milk (or 3 cups milk + 1 cup cream)
2 cups sharp cheddar cheese, shredded
1 cup Gruyère cheese, shredded
1 cup mozzarella or Monterey Jack cheese, shredded
1 tsp mustard powder (optional)
Salt and black pepper, to taste
1 cup breadcrumbs or panko
Fresh parsley or paprika for garnish (optional)
Instructions
Preheat oven to 375°F (190°C). Butter a 9×13-inch baking dish.
Cook pasta until just shy of al dente (1–2 minutes less than package directions). Drain and set aside.
Melt 4 tbsp butter in a saucepan over medium heat. Whisk in flour to create a roux; cook for 1–2 minutes until lightly golden.
Slowly whisk in milk (and cream, if using). Continue whisking until the sauce thickens and bubbles gently.
Remove the saucepan from the heat. Gradually add cheddar, Gruyère, and mozzarella, stirring until smooth. Season with mustard powder, salt, and pepper.
Fold the pasta into the cheese sauce until evenly coated. Transfer mixture to the prepared baking dish.
Mix breadcrumbs with 2 tbsp melted butter. Sprinkle over the pasta. Top with a little extra shredded cheese if desired.
Bake uncovered for 20–25 minutes, until bubbling and golden brown. Broil for 1–2 minutes for extra crisp topping. Garnish with parsley or paprika before serving.
Notes
Undercooking pasta prevents mushiness after baking.
Use block cheese and shred it yourself for smoother melting.
For make-ahead: Assemble, cover, and refrigerate up to 24 hours. Bake slightly longer when chilled.
Add-ins like bacon, jalapeños, or broccoli can elevate the dish.
To reheat leftovers, cover with foil and add a splash of milk to restore creaminess.
