Description

Creamy Strawberry Cheesecake Crunch Bites made with a smooth strawberry cheesecake filling, dipped in strawberry glaze, and rolled in a buttery graham cracker crunch. These easy no-bake dessert bites are perfect for parties, holidays, or make-ahead treats.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup strawberry puree
  • 1 cup graham crackers, crushed
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup freeze-dried strawberries, crushed
  • 1 cup strawberry glaze

Instructions

  1. Beat the softened cream cheese in a mixing bowl until smooth and creamy.
  2. Add the powdered sugar, vanilla extract, and strawberry puree, then mix until fully combined and silky.
  3. Refrigerate the cheesecake filling for about 30 minutes, until firm enough to roll.
  4. In a separate bowl, combine crushed graham crackers, granulated sugar, melted butter, and crushed freeze-dried strawberries.
  5. Scoop the chilled cheesecake mixture into small balls, about 1 inch in diameter.
  6. Dip each cheesecake ball into the strawberry glaze, allowing excess to drip off.
  7. Roll the glazed balls in the graham cracker mixture, gently pressing so the coating sticks.
  8. Place the coated bites on a parchment-lined baking sheet and refrigerate for at least 1 hour before serving.

Notes

  1. Chill the filling well before rolling to make shaping easier.
  2. Freeze-dried strawberries add strong flavor without extra moisture.
  3. Keep the bites refrigerated until serving for the best texture.
