Description

A homemade copycat of the popular Joe & the Juice tuna sandwich made with creamy seasoned tuna, fresh avocado, pesto, and crisp sourdough bread. Perfect for an easy, comforting café-style lunch at home.


Ingredients

  • Sourdough bread slices
  • 12 ounces canned tuna, drained
  • 1/2 cup mayonnaise
  • 1/2 tablespoon lemon juice
  • 1/4 cup red onion, finely diced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 to 3 tablespoons diced jalapeños
  • 1/2 tablespoon yellow mustard
  • 1 tablespoon chopped fresh cilantro
  • Prepared pesto
  • Fresh tomatoes, sliced
  • Ripe avocado, sliced
  • Hot sauce, optional


Instructions

  1. Drain the canned tuna well and place it in a bowl, breaking it up gently with a fork.
  2. Add mayonnaise, lemon juice, red onion, salt, and black pepper, and mix until creamy.
  3. Fold in the jalapeños, mustard, and chopped cilantro, then adjust seasoning to taste.
  4. Heat a grill pan or panini press over medium heat and lightly oil it.
  5. Toast the sourdough bread slices until golden and crisp.
  6. Spread pesto on one slice of bread, layer with avocado, tomato, and tuna, then close the sandwich and serve warm.

Notes

  1. Drain the tuna thoroughly to avoid a watery filling.
  2. Adjust the spice level by adding more or less jalapeño or hot sauce.
  3. The tuna mixture can be prepared up to one day ahead and stored in the refrigerator.
