A homemade copycat of the popular Joe & the Juice tuna sandwich made with creamy seasoned tuna, fresh avocado, pesto, and crisp sourdough bread. Perfect for an easy, comforting café-style lunch at home.

- Sourdough bread slices
- 12 ounces canned tuna, drained
- 1/2 cup mayonnaise
- 1/2 tablespoon lemon juice
- 1/4 cup red onion, finely diced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 to 3 tablespoons diced jalapeños
- 1/2 tablespoon yellow mustard
- 1 tablespoon chopped fresh cilantro
- Prepared pesto
- Fresh tomatoes, sliced
- Ripe avocado, sliced
- Hot sauce, optional
Instructions
- Drain the canned tuna well and place it in a bowl, breaking it up gently with a fork.
- Add mayonnaise, lemon juice, red onion, salt, and black pepper, and mix until creamy.
- Fold in the jalapeños, mustard, and chopped cilantro, then adjust seasoning to taste.
- Heat a grill pan or panini press over medium heat and lightly oil it.
- Toast the sourdough bread slices until golden and crisp.
- Spread pesto on one slice of bread, layer with avocado, tomato, and tuna, then close the sandwich and serve warm.
Notes
- Drain the tuna thoroughly to avoid a watery filling.
- Adjust the spice level by adding more or less jalapeño or hot sauce.
- The tuna mixture can be prepared up to one day ahead and stored in the refrigerator.
