Description

Soft, cake-like Lunch Lady Brownies with rich chocolate frosting, inspired by classic school cafeteria desserts and made with simple pantry ingredients.


Ingredients

  • 1 cup salted butter, melted
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 4 large eggs
  • 4 teaspoons vanilla extract
  • 1/4 cup salted butter, softened
  • 1/4 cup 2% milk
  • 1/4 cup unsweetened cocoa powder
  • 3 cups powdered sugar


Instructions

  1. Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper, lightly spraying with nonstick spray.
  2. In a large bowl, mix the melted butter and cocoa powder until smooth and fully combined.
  3. Add the flour and sugar, then stir until just combined.
  4. Add the eggs and vanilla and mix gently until a thick batter forms, being careful not to overmix.
  5. Spread the batter evenly into the prepared pan and bake for 25 to 30 minutes, until a toothpick inserted shows a few moist crumbs.
  6. Remove the brownies from the oven and let them rest for about 15 minutes before frosting.
  7. To make the frosting, beat the softened butter, milk, cocoa powder, and powdered sugar until smooth.
  8. Spread the frosting over the warm brownies and allow them to cool completely before slicing.
