- 1/3 cup extra-virgin olive oil
- 1/4 cup reduced-sodium soy sauce
- 2 tablespoons fresh lime or lemon juice
- 2 tablespoons packed light brown sugar
- Kosher salt
- Freshly ground black pepper
Instructions
- Whisk the olive oil, soy sauce, citrus juice, and brown sugar together in a bowl until well combined. Add the flank steak and turn to coat evenly.
- Marinate the steak for at least 30 minutes and up to 2 hours, turning once if possible.
- Remove the steak from the marinade and pat completely dry with paper towels. Season lightly with salt and black pepper.
- Preheat a grill to medium-high heat. Cook the steak for about 5 minutes per side for medium-rare, adjusting for thickness.
- Alternatively, broil the steak close to the heat source, turning once, until cooked to your desired doneness.
- Let the steak rest for at least 5 minutes, then slice thinly against the grain and serve.
Notes
- Do not marinate longer than 2 hours or the surface of the steak may soften too much.
- Always slice flank steak against the grain for the most tender texture.
- An internal temperature of about 130°F gives a juicy medium-rare result.
