- 1/2 cup unsalted butter, softened
- 2 1/2 cups powdered sugar
- 12 graham crackers
- 3 cups semisweet chocolate chips
- 2 tablespoons shortening or coconut oil
- 1/2 cup peanut butter chips
- 1 teaspoon shortening or coconut oil
Instructions
- Line two jelly roll pans with parchment paper and set wire racks on top
- In a large mixing bowl, combine peanut butter and softened butter until smooth
- Gradually add powdered sugar and mix until creamy
- Roll mixture into balls slightly larger than 1-inch
- Place one ball on half a sheet of graham cracker and gently spread to the edges
- Repeat for all crackers
- Melt chocolate chips and shortening over low-medium heat until smooth
- Cool chocolate for 5-7 minutes before dipping
- Hold each cracker by edges and dip the peanut butter side into chocolate
- Transfer dipped crackers to wire rack chocolate side up
- Melt peanut butter chips and shortening, then drizzle over chocolate
- Allow chocolate to set at room temperature for 2-3 hours or refrigerate to speed up
