No Bake Buckeye Graham Crackers

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 12 graham crackers
  • 3 cups semisweet chocolate chips
  • 2 tablespoons shortening or coconut oil
  • 1/2 cup peanut butter chips
  • 1 teaspoon shortening or coconut oil


Instructions

  1. Line two jelly roll pans with parchment paper and set wire racks on top
  2. In a large mixing bowl, combine peanut butter and softened butter until smooth
  3. Gradually add powdered sugar and mix until creamy
  4. Roll mixture into balls slightly larger than 1-inch
  5. Place one ball on half a sheet of graham cracker and gently spread to the edges
  6. Repeat for all crackers
  7. Melt chocolate chips and shortening over low-medium heat until smooth
  8. Cool chocolate for 5-7 minutes before dipping
  9. Hold each cracker by edges and dip the peanut butter side into chocolate
  10. Transfer dipped crackers to wire rack chocolate side up
  11. Melt peanut butter chips and shortening, then drizzle over chocolate
  12. Allow chocolate to set at room temperature for 2-3 hours or refrigerate to speed up
