No Bake Turtle Mini Cheesecakes

Description

No Bake Turtle Mini Cheesecakes are easy creamy mini cheesecakes topped with gooey caramel, chocolate ganache, and crunchy pecans.


Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1 tbsp sugar
  • 5 tbsp butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 tsp vanilla extract
  • 1 cup heavy whipping cream
  • Caramel sauce or homemade
  • 6 oz semi-sweet chocolate, chopped
  • 1/4 cup heavy cream
  • Chopped pecans
  • Mini chocolate chips


Instructions

  1. Prepare 12 mini baking cups or a mini springform pan.
  2. Combine graham cracker crumbs and melted butter, press into cups to form crust.
  3. Chill crust while preparing filling.
  4. Beat cream cheese, powdered sugar, and vanilla until smooth.
  5. Whip in heavy cream until mousse-like consistency.
  6. Spoon filling onto chilled crusts, 4-5 tablespoons each.
  7. Chill filled cheesecakes until firm.
  8. Melt chocolate with heavy cream to make ganache.
  9. Spoon caramel over each cheesecake.
  10. Top with chocolate ganache over caramel.
  11. Sprinkle chopped pecans and mini chocolate chips on top.
  12. Store cheesecakes in refrigerator.

Notes

  1. For homemade caramel sauce, combine 1 cup granulated sugar, 6 tbsp butter, 1/2 cup heavy cream, and 1 tsp salt over low heat until thickened.
  2. Chill layers properly to prevent soggy crust.
  3. Add toppings just before serving if making ahead.
