  • 1 lb ribeye, skirt, or flat iron steak, thinly sliced

  • 1 tbsp oil (olive or neutral)

  • 1 large yellow onion, sliced

  • ¾ cup mixed red, green, and yellow bell peppers, sliced

  • 1 cup mushrooms, sliced (optional)

  • 2 cloves garlic, minced

  • ½ cup shredded provolone

  • ½ cup shredded mozzarella

  • ½ cup Cheez Whiz (or additional shredded cheese)

  • Salt & cracked black pepper to taste


Instructions

  • Freeze steak for 30–45 minutes for easier slicing. Slice thinly against the grain.

  • Preheat cast iron skillet over medium-high for 5 minutes. Add oil and swirl to coat.

  • Sear beef in batches, 90 seconds per side. Set aside.

  • Sauté onions in the same skillet for 2 minutes, then add bell peppers and mushrooms. Cook until edges caramelize, about 3 minutes. Add garlic in the final 60 seconds.

  • Layer cooked veggies evenly in skillet. Place seared steak slices on top.

  • Sprinkle cheeses over steak and broil for 90 seconds, 4 inches from the heat, until bubbly and golden.

  • Let it rest for 2 minutes before serving. Serve with crusty bread or salad, or eat it straight from the pan.
