Instructions
- Dice pineapple into bite sized pieces
- Dice cucumber into small cubes or half moons
- Thinly slice red onion and jalapeño
- Chop cilantro leaves
- Whisk lime juice honey olive oil salt pepper and red pepper flakes
- Combine pineapple cucumber onion cilantro and jalapeño in a bowl
- Toss gently to mix ingredients evenly
- Pour dressing over salad and toss to coat
- Sprinkle feta cheese on top if using
- Chill for 15 to 30 minutes before serving
- Garnish with extra cilantro or lime juice and serve
