- 3/4 cup white chocolate chips
- 6 tablespoons butter
- 1/3 cup water
- 1 package (4-serving size) instant pistachio pudding mix
- 3 cups powdered sugar
- 1/2 cup shelled pistachios
Instructions
- Line an 8×8-inch square baking pan with foil and set aside.
- Place the white chocolate chips, butter, and water in a large microwave-safe bowl and microwave on high for 1 minute, then stir until smooth. Heat an additional 30 seconds if needed.
- Stir the dry pistachio pudding mix into the melted chocolate mixture until fully combined.
- Add the powdered sugar one cup at a time, stirring well after each addition until thick and smooth.
- Fold in the shelled pistachios until evenly distributed.
- Press the fudge evenly into the prepared pan and smooth the top.
- Refrigerate for about 2 hours, or until fully set.
- Lift the fudge out using the foil, remove foil, and cut into squares with a sharp knife.
Notes
- Measure the powdered sugar carefully for proper firmness.
- If the fudge feels soft, allow extra chilling time.
- Unsalted pistachios give better control over sweetness.
- Store in an airtight container in the refrigerator for best texture.
