Description

Creamy pistachio fudge made with white chocolate, instant pistachio pudding, and real pistachios. This easy no-bake fudge sets beautifully in the fridge and is perfect for holidays, gifting, and family dessert trays.


Ingredients

  • 3/4 cup white chocolate chips
  • 6 tablespoons butter
  • 1/3 cup water
  • 1 package (4-serving size) instant pistachio pudding mix
  • 3 cups powdered sugar
  • 1/2 cup shelled pistachios


Instructions

  1. Line an 8×8-inch square baking pan with foil and set aside.
  2. Place the white chocolate chips, butter, and water in a large microwave-safe bowl and microwave on high for 1 minute, then stir until smooth. Heat an additional 30 seconds if needed.
  3. Stir the dry pistachio pudding mix into the melted chocolate mixture until fully combined.
  4. Add the powdered sugar one cup at a time, stirring well after each addition until thick and smooth.
  5. Fold in the shelled pistachios until evenly distributed.
  6. Press the fudge evenly into the prepared pan and smooth the top.
  7. Refrigerate for about 2 hours, or until fully set.
  8. Lift the fudge out using the foil, remove foil, and cut into squares with a sharp knife.

Notes

  1. Measure the powdered sugar carefully for proper firmness.
  2. If the fudge feels soft, allow extra chilling time.
  3. Unsalted pistachios give better control over sweetness.
  4. Store in an airtight container in the refrigerator for best texture.
