Description

A light, refreshing cucumber lemonade naturally sweetened with honey, made with fresh lemon juice and cooling cucumber for a clean summer drink.


Ingredients

  • 1⅓ cups fresh cucumber juice
  • 1 cup freshly squeezed lemon juice
  • ¼ to ½ cup raw liquid honey
  • 4 cups cold water
  • Ice, for serving
  • Optional lemon slices or cucumber rounds


Instructions

  1. Blend chopped cucumbers until smooth, then strain through a fine mesh sieve to collect fresh cucumber juice.
  2. Combine the lemon juice and honey in a large pitcher and stir until the honey is fully dissolved.
  3. Add the cucumber juice and cold water, then stir gently until evenly combined.
  4. Taste and adjust sweetness or tartness if needed.
  5. Serve over plenty of ice with optional lemon or cucumber garnish.

Notes

  1. Use fresh, mild cucumbers for best flavor.
  2. Liquid honey dissolves more easily than crystallized honey.
  3. Color may fade slightly after refrigeration but flavor remains fresh.
