This creamy, comforting, and quick-to-make pasta dinner uses store-bought rotisserie chicken. This easy weeknight meal features tender shredded chicken, rich homemade Alfredo sauce, and perfectly cooked fettuccine. It is ideal for busy families who want a satisfying dinner without the hassle.
Ingredients
1 rotisserie chicken, shredded
1 pound fettuccine pasta
2 tablespoons butter
1 cup heavy cream
½ to ¾ cup grated Parmesan cheese
Salt and pepper, to taste
Fresh parsley, chopped (optional)
Instructions
Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine until al dente. Reserve 1 cup of pasta water, then drain the pasta.
Warm the Chicken: In a large skillet over medium heat, melt butter. Add shredded rotisserie chicken and heat until warmed through.
Make the Alfredo Sauce: In the same skillet, add heavy cream and simmer for 2–3 minutes. Lower heat and stir in Parmesan cheese until melted and smooth.
Combine: Add the cooked pasta to the skillet and toss to coat it in the sauce. If needed, add a bit of reserved pasta water for consistency.
Finish & Serve: Return chicken to the skillet and mix until well combined. Season with salt and pepper. Garnish with fresh parsley and extra Parmesan, if desired.
Notes
You can use pappardelle or linguine if fettuccine is unavailable.
Add steamed broccoli or spinach for extra nutrition.
For a spicier version, stir in red pepper flakes or jalapeños.
Use store-bought Alfredo sauce for a quicker alternative.
Best served fresh, but can be reheated with added cream or milk.
