  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika

  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 3 tablespoons sriracha sauce
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon honey
  • 2 cloves fresh garlic, minced
  • 1 tablespoon fresh lime juice
  • 8 soft slider buns
  • 2 cups shredded lettuce
  • 1 cucumber, thinly sliced
  • 8 pickle slices
  • 8 slices cheese (optional)


Instructions

  1. Pat the chicken breasts completely dry, pound to an even 1/2-inch thickness, and season generously with salt and pepper. Let rest briefly at room temperature.
  2. Set up three shallow dishes: flour mixed with half the spices, beaten eggs with a splash of water, and panko mixed with the remaining spices.
  3. Coat each piece of chicken in flour, dip into the egg, then press firmly into the panko until fully coated.
  4. Whisk together mayonnaise, sriracha, sweet chili sauce, honey, garlic, and lime juice to make the dynamite sauce. Let it rest while the chicken is fried.
  5. Heat about 1/2 inch of oil in a large skillet to 350°F. Fry the chicken in batches for 4–5 minutes per side until deep golden and cooked through.
  6. Transfer fried chicken to a wire rack to drain and stay crispy.
  7. Lightly toast the slider buns. Spread dynamite sauce on both sides, layer lettuce, chicken, cucumber, pickles, and cheese if using, then top with the bun and serve immediately.

  1. Press the panko firmly onto the chicken to help the coating stay in place during frying.
