- 2 pounds boneless, skinless chicken breasts or thighs
- 1/4 cup reduced-sodium tamari or soy sauce
- 1 can (8 ounces) crushed pineapple with juice
- 2 tablespoons tomato paste
- 2 tablespoons honey
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons freshly grated ginger
- 1/4 teaspoon kosher salt, plus more to taste
Instructions
- Whisk together the tamari, crushed pineapple, tomato paste, honey, garlic powder, onion powder, ginger, and salt until smooth.
- Reserve 1/4 cup of the sauce and set it aside.
- Place the chicken in a 6-quart slow cooker and pour the remaining sauce over the top, turning to coat.
- Cover and cook on low for about 6 hours or on high for about 4 hours, until the chicken is tender.
- Shred the chicken directly in the slow cooker using two forks.
- Stir in the reserved sauce, taste, and adjust seasoning if needed.
- Serve warm on buns, in bowls, or in lettuce wraps.
Notes
- Use thawed chicken for best texture and even cooking.
- Chicken thighs will be slightly juicier, while breasts are lighter.
- If the sauce seems thin, let the shredded chicken rest uncovered for a few minutes before serving.
- Reduced-sodium soy sauce can be used if tamari is unavailable.
