Description

This smoked salmon pasta salad combines creamy dressing, cold-smoked salmon, fresh herbs, and al dente pasta for a refreshing, protein-rich meal that’s perfect for lunches, brunches, or potlucks.


Ingredients

8 oz rotini or bowtie pasta Cooked al dente and rinsed cold
6 oz cold-smoked salmon Torn into bite-sized pieces
1 small red onion Thinly sliced
2 tbsp capers Drained
2 tbsp fresh dill Chopped
1 tbsp lemon juice Freshly squeezed
½ cup sour cream or Greek yogurt Your choice of creamy base
2 tbsp olive oil For the dressing
Salt and pepper To taste
Optional: avocado, cucumber, arugula For added texture or greens


Instructions

  • Bring a large pot of salted water to a boil. Cook the pasta until just al dente. Drain and rinse under cold water.

  • Whisk together sour cream (or Greek yogurt), lemon juice, olive oil, salt, and pepper in a medium bowl.

  • In a large mixing bowl, combine the cooled pasta, sliced red onion, capers, dill, and smoked salmon.

  • Pour the dressing over the pasta mixture and gently toss until evenly coated.

  • Chill in the fridge for at least 30 minutes before serving.

  • Optional: Garnish with more dill or lemon zest before serving.

Notes

Add the smoked salmon just before serving to maintain its texture for the best results.

Gluten-free pasta can be used if desired.

Store in an airtight container for up to 3 days.
