Description
Soft and gooey s’mores cookies packed with chocolate, marshmallows, and graham crackers. These cookies bring that classic campfire flavor into a simple homemade treat.

- 1 cup plain flour
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 big egg
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon cooking powder
- 1 teaspoon cornstarch
- 1/2 teaspoon salt
- 4 graham crackers, roughly chopped
- 1 cup mini marshmallows, torn in half
- 3/4 cup chocolate chips
- 1 chocolate bar, chopped (for topping)
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Roughly chop graham crackers and chocolate, and tear mini marshmallows in half.
- Whisk together flour, salt, baking powder, baking soda, and cornstarch in a bowl.
- Beat butter and sugars together until creamy, about 2 minutes.
- Add egg and vanilla, mix until combined, then scrape the bowl.
- Gradually add dry ingredients and mix on low until just combined.
- Fold in most of the marshmallows, chocolate chips, and graham crackers.
- Chill the dough for at least 1 hour.
- Scoop 2 tablespoon portions of dough, roll into balls, and space 2 inches apart.
- Bake for 8 minutes, then add reserved marshmallows and chocolate on top.
- Return to oven for 2–3 minutes until edges are golden.
- Cool completely on the baking sheet before serving.
Notes
- Tear marshmallows in half to prevent spreading.
- Chilling the dough helps cookies stay thick.
- If marshmallows melt out, reshape cookies while warm.
- Use a mix of chocolate chips and chunks for better texture.
