Ingredients
4 salmon fillets (about 6 oz each)
2 tablespoons chipotle in adobo sauce
2 tablespoons honey
1 tablespoon olive oil
1 tablespoon lime juice
2 garlic cloves, minced
2 cups cooked rice or quinoa
1 avocado, sliced
1 cup shredded red cabbage or slaw mix
¼ cup chopped fresh cilantro
Instructions
Preheat oven to 400°F and line a baking sheet with parchment paper.
In a small bowl, whisk together chipotle in adobo, honey, olive oil, lime juice, and garlic.
Brush the salmon fillets with the sauce and place them on the baking sheet.
