  • 1/2 cup milk or unsweetened plant-based milk
  • 1 tablespoon chopped fresh cilantro (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat and cook the diced onion and garlic until softened and fragrant.
  2. Add the chopped bell peppers and cook until tender and glossy.
  3. Stir in the black beans, corn, diced tomatoes, vegetable broth, and spices, then bring the soup to a gentle simmer.
  4. In a bowl, mix the cornmeal, flour, baking powder, and salt, then stir in the olive oil and milk to form a thick batter.
  5. Drop spoonfuls of the dumpling batter into the simmering soup, spacing them evenly.
